With the expert guidance of Andrew Sharp - who has for several years been an adviser to His Royal Highness the Prince of Wales on his Mutton Renaissance Campaign - learn the differences between lamb, hogget and mutton and how to identify quality meat.

Starting with whole carcasses Andrew will teach introductory butchery techniques as you discover how to cook these delicious meats to ensure that their natural flavour is maximised.

Throughout the day you will learn how best to prepare various joints, both for the freezer and immediate cooking, and how to transform the underappreciated cuts into taste sensations.
